Hello lovers! I posted these on my Instagram story and had a few people requesting the recipe so I decided it was a win for one of my first blog posts.
So I am a massive sweet's lover (anyone else's favourite meal out there dessert?) and enjoy my time in the kitchen. My mum loves to bake and is a FANTASTIC cook so I would like to think I have learnt from the best. I started cooking when I was 13 and pretty much didn't stop after that haha so that means plenty of different recipes for you guys. I think my cooking style can be described as my take on traditional Italian recipes combined with my love for Mexican and Asain food! I think we eat Mexican at least once a week and same for asain food. I have a delicious Vegetarian nacho recipe that is ALWAYS a hit with Jordan so if you guys need some dinner inspiration let me know.
Now back to these brownies.
Here are some healthier brownies I made for Jordan to take to work. He does physical work so i need to make sure he eats enough. Being vegetarian means we need to eat more in terms of quantity then the normal person as meat is way more dense and filling and vegetables contain a lot of water. I tried these because I don't always want to make unhealthy options and this is like a treat or energy boost for hi when he is at work.
These are yum and taste great a little frozen. The consistency is a bit soft which is why by freezing them and then putting them in Jordan's lunch box they didn't crumble before he could eat them.
Don't expect them to taste as sweet or exactly like normal brownies because they won't but they are a great healthy, yum option. My mother in law loved them and she is not a sweet lover so they must be good !
Tips :
Use a processor that holds over 1.5litres. Mine is only small and I had to blend it in 3-4 batches.
I didn't make it for the picture but I think an avocado mousse would be so yum on top. I am not sure how this would freeze.
Slice a knife through the middle of the sweet potatoes to check if its cooked all the way through. It should slide easily through
Ingredients can be purchased online or at health food stores
Here is what you need :
1kg Sweet potato
1 cup / 140g Sunflower seeds, soaked
1 cup / 175g Dates
1 cup / 120g Coconut flour
2tbsp of Coconut oil
4 tbsp Cacao/Cocoa powder depending on how healthy you want to go
4 tbsp Maple/Aghave syrup
3 tbsp Chia seeds
9 tbsp Water
2 tsp Cinnamon
a pinch of Salt
Here is what you need to do
Pre-heat oven to 180 C.
Bake the sweet potatoes until soft. The time will depend on the size of your sweet potato's. I bought large ones so it took about an hour. You want to be able to peel away the skin so you are left with just the flesh and can scoop it out.
Soak the chia seeds in 9 tbsp of water. Soak the sunflower seeds for at least 10 mins then rinse and drain.
Place all of the brownie ingredients into a food processor for 2-3 mins until broken up. I left mine with a few chunky bits for texture but its up to you.
Pour the brownie mixture into a tin lined with greaseproof/baking paper. Use a large tin of your desired size but you will need to adjust the cooking times depending on the size and how high you make them.
Bake at 180 C for 30-35 mins until when you stick in a knife it comes out clean. Leave to cool and firm up before taking out of the pan or it will just crumble.
